Tomato and Avocado Salad with Bread Croutons
This salad was the result of raiding the kitchen in our cottage in Carriacou. Out there fresh produce is often hard to get and very expensive so I make sure to use everything up.
For 2 people
Ingredients
For the salad
1 big tomato
1 avocado
1 red onion finely chopped
Some salad leaves or cabbage finely sliced
Some cheese - I used feta, cubed
2 slices of stale bread
Olive oil
Garlic
For the dressing
A tsp of Dijon mustard
1 tbsp of vinegar (cider, white wine)
3 tbsp of olive oil
A squirt of nutmeg syrup (or a little honey)
salt and pepper
Method
Cube the stale bread and fry it on a pan together with a clove of garlic.
Chop up the salad ingredients.
In a small bowl mix the mustard, syrup and vinegar. When dissolved whisk in the olive oil till it has a thick vinaigrette consistency and mix it into the salad.
Assemble the salad in bowls. Put the crunchy bread croutons and cheese on top.
