Mint and Lime Panna Cotta

Mint and Lime Panna Cotta

I made this for my friends birthday party. It was an Indian themed dinner, so I thought these panna cottas made with lime, mint and cardamom syrup was a nice finish to the meal.

Ingredients

  • Serves 8

  • 500 ml/ 5 dl double cream (piskefløde)

  • 100 ml/ 1 dl full fat milk

  • 100/ 1dl water

  • 4 limes

  • 4 sheets of gelatin (husblas)

  • 5 tbsp fine cane sugar

  • 3 cardamom capsules

  • A bunch of fresh mint

  • Pomegranate seeds

  • Chocolate bisquits

Method

  1. Soak the gelatin in cold water. Meanwhile heat up the water with the sugar, cardamom and mint (leave enough mint leaves to garnish 8 servings). Boil till the sugar dissolves and you have a syrup.

  2. Strain the syrup and ad the lime juice. Take out the gelatin and put in a bowl and melt it over a pot of boiling water (or like me melt it in a chocolate melting device). When dissolved ad a little of the syrup to the gelatin. Then pour in the gelatin in the syrup.

  3. Gently pour the syrup into the cream while whisking.

  4. Divide the mix into 8 glasses and leave to cool in the fridge for 4 hours.

  5. When serving, decorate with a sprig of mint, pomegranate seeds and a chocolate cigar.
