Elder Flower Cordial
Elderflower cordial
Ingredients:
35 elderflower heads
4 organic lemons
1,5 litre of boiling water
1 kilo of sugar
50 grams of citric acid
Method:
Boil the water and ad the sugar. Take it of the heat when the sugar is dissolved. Ad the citric acid and leave to cool
In a container or bowl put the sliced lemons and elderflower heads and puor over the sugar water.
Leave in the fridge for 48-72 hours.
strain through a muslin cloth placed in a sieve.
sterilize the bottles in the microwave for 2-3 min or put in an oven, turn the heating up to 140 C and keep for 15 min. Pour in a spoonful of Atamon (a wonderful product for sterilizing jars and bottles, that I have had trouble finding in UK).
Pour the cordial in to the bottles and store in the fridge, it keeps for 3-4 weeks. If you want to keep it for longer, you can use plastic bottles and freeze the cordial.
Elderflower cordial is a real summer treat. You can just drink it diluted with water 1:5 or use it as a mixer in drinks. It goes well with white wine as a spritzer or with gin or vodka with some sparkling water and some lime peel.
