Leftovers

There’s something extremely satisfying about using leftovers. It saves on my food budget and I can be smug about making a modest contribution to less food waste. You can use old bread as croutons in a salad, as replacement for flour in fish cakes and meatballs and you can make a sweet treat with french toast topped with fruit and maple syrup. Cold meat such as chicken and beef can be great in a salad. Bulgur, rice and grains can make a salad into a more substantial meal. Some leftover soup can be a brilliant way to give a curry that lovely thick consistency. So let’s get recycling!
